Problem: We don't have a very good way to test stuff atm - no mocks on services etc. This adds the basic framework for that.

Solution: Add mocks via mockito (using this as a base: https://www.filledstacks.com/post/how-to-mock-for-unit-testing/)

Note: this does mean some services like the API thing aren't doing much atm, so we probably need a good idea of what to mock and when.
