I need to use this in a client project... let's get the ball rolling, let me know what else is required

Add php 8.0 to php version
Up bitpay/sdk to latest version
Up phpunit to latest version
Remove "minimum-stability": "dev" (Not sure if I should... it would not run at all with this)

Not sure if I did this right, cloned #27 and updated the bitpay library, tests are passing my end. Also needed to update phpunit

@iDevelopThings Yeah you raised PR on the correct branch. Thanks for the contribution! I have released a new version supporting PHP 8.0. Check out the release https://github.com/vrajroham/laravel-bitpay/releases/tag/v4.0.0
