Remove unnecessary steps with Jitsi changes
Split audio step to support both Jitsi and Zoom workflows

@vsnt @wyc @kimdhamilton bumping this, because I forgot all about the steps added by rhiaro's "request changes" at the end of this thread last night and i know of at least one other volunteer scribe who's had this problem :D

seems to me both ready to merge and good?
