Adding all editors for DID work items here (and Joe), for now.

Hey @decentralgabe the CODEOWNERS stuff won't trigger unless these people are also added w/ write access to the repo, IIRC: @dmitrizagidulin @mccown @christophera @danpape

I struggled w/ that for weeks in the did-spec-registries repo.

Thanks @msporny I had sent @pchampin a note asking to add the missing editors before I merged this. Hopefully should be fixed soon.

@pchampin we might want to consider ensuring that the Chairs have admin (or at least manage) rights on all the repos under the WG's control; it would help spread the load among more people.
