Fix broken links on did:3, did:nft, and did:safe #518

This PR simply fixes broken links for the three mentioned DID method.

Additionally updates contact info for did:3 and did:nft

Your email never came through on the DID mailing list... so, I'm personally confirming it given that all the Editors and W3C staff were cc'd on the email.

Thanks Manu. That's weird Stefan confirmed that he got the consent request and completed it, so not sure why the email didn't arrive.
