Replace reference to VC-data-model by a reference to VC-data-integrity #1552

After a private conversation with @msporny, I appears that

we should refer to VC-data-integrity rather than VC-data-model
the Data Integrity spec is not meant to be restricted to JSON-LD but can be applied to any Linked Data format
