Improvements to the EAA mapping #2613

From some exchanges with colleagues, we realized that it was possible to improve the mapping between the European Accessibility Act and the EPUB standard. Here you can find the updated version.

We'll wait for feedback to publish the updated version.

Looks fine to me, but I haven't tried to dig into the new SC being cited.
