Informative appendix explaining proof sets and chains #237

This PR addresses issue https://github.com/w3c/vc-data-integrity/issues/234 which arose out of discussions on PR https://github.com/w3c/vc-data-integrity/pull/224 on fixing the proof chain creation and verification algorithms.

This is informative text aimed at illustrating the differences between proof sets and proof chains and illustrating the security properties of proof chains. This text is much longer than the rather concise algorithm for construction/verifying proof chains so I'm putting it in an informative appendix.

Edits, suggestions, and such welcome. @TallTed I recall you volunteering to help make this better ;-)
