Test Vectors should use VC1.1 and VC 2.0 #49

The default test data here is currently VC 1.1: https://github.com/w3c/vc-di-ecdsa-test-suite/blob/main/tests/mocks/achievement/document.json

This should be switched to VC 2.0 test vectors such as:
