Hi,

I checked your docker image. It is a good starting point. Here are some thoughts

Use a standard ruby as base image. Yours is dated
(Consider to install some fonts there to render the pdfs nicely)
Set the WORKDIR so that it is clear which folder shall be the main folder for a volume
use in the README $PWD in -v $PWD:/workdir ...
