[WalletKit] Implement quick-setup endpoint

This endpoint will create the required WalletKit configurations in order to be able to use it with waltid-integrations:

• [x] tenant (issuer + verifier)
• [x] issuer & verifier configs
• [x] key-pair
• [x] did (did:key for the moment)
