Improve SkewT Layout Examples

Priority: Should have
Story: As a researcher using functions to visualize the data, I want the Skewt log-P plots to have better layouts so that I can better understand them .
Acceptance criteria:
Given a data set applicable to SkewT plotting
When viewing skew-T log-P diagrams
Then the layouts will look clear to me
