I think you need to build manually from official git and don't forget to build any dependence needed by Waydroid. After you build it, install it on your Gentoo and follow docs for guide after install

Gentoo is not general Linux distros. And not many people knows it. That's why it's not popular as another general Linux distros.

I guess you should ask it in reddit on subreddit r/Waydroid or r/Gentoo, or even r/Android if you need the answer for that from another Gentoo user about hoe to compile an app. I suggest it because I ain't use Gentoo.
