Adding OSs `AlmaLinux` and `Rocky Linux` in images #872

It would be nice to add AlmaLinux and Rocky Linux in images, any objection. If acceptatble I can work on a PR

Hi @srbala 👋 Thanks for commenting on this. I'm +1 on adding these 2 OS's to the ignite image builds. When you open that PR, if it's possible for you to expand the Makefile and matching GitHub action, that would be great.

context for any other's lacking it: CentOS 8 turns EOL in December, and there will no longer be a RHEL-downstream version of CentOS. CentOS Stream will be a rolling release upstream from RHEL, similar to but less experimental than Fedora.

AlmaLinux and Rocky Linux aim to fill the gap that CentOS 9 would have filled by being a compatible downstream for RHEL.
