Upgrade to latest Lit SSR with automatic minimal DOM shim

Upgrades to Lit SSR 3, which adds automatic and more minimal DOM shimming. This required switching from window -> globalThis, since window isn't defined anymore.

Also:

• Found a spot where where we weren't setting a location for SSR (rendering the homepage)
• Found an unnecessary log statement
• Updated other dependencies
