Update script for bumping versions in concepts-pipeline #5804

What does this change?

As a result of https://github.com/wellcomecollection/concepts-pipeline/pull/149, the concepts pipeline now allows for multiple versions/Terraform stacks in parallel.

This updates the script which bumps the catalogue pipeline date in the concepts pipeline repository to make it bump the date in all of the Terraform stacks.

How to test

The modified portions of the script can be tested locally by running them from the root of the concepts-pipeline repository.
