Stop supporting legacy Exhibition Guides QR Codes + remove `egWork` toggle

There are a few TODOs and tidies in the codebase that can be done when we decide to stop supporting legacy QRs (basically once we've moved the Jason guide over to the new model).

After Jason is migrated (and no legacy QR code is supported):

• [x] Remove .skip() from last test set in playwright/test/exhibition-guides.test.ts
• [x] Change the tracked HotJar id to Jason's new DG ID. not needed, this was this exhibition PAGE, which doesn't change.
• [x] Add HotJar to Jason's [stopId] pages and Jason's DG's landing.
• [x] Remove old redirection logic from digital-guides utils
• [x] Remove redirection logic from /guides/exhibitions/[id]/[type] as it shouldn't be needed on that page anymore. Old QR codes linked to that page but not the new ones.

Once egWorks toggle is removed:

• [x] Simplify codebase and only keep new styles
• [x] Address two TODOs in playwright/test/exhibition-guides.test.ts

Once ALL legacy Exhibition guides have been migrated (#11181):

• [x] Remove captions-and-transcripts from accepted types (I think, double-check if other legacy EG need it) won't do

Then:

• [x] Find this ticket number in project and see if any other TODOs are referencing it that I might've skipped.

HotJar tracking now added in prod for [stopId] pages for Jason, as well as /guides/exhibitions/ZthrZRIAACQALvCC (again, just Jason). As outlined here, we currently track every /bsl /audio and /captions pages, no matter the exhibition.

I've got a PR for the rest of this, but pausing as unsure if we want to keep the egWork/"Exhibition Guides redesign/restructure work" toggle for a bit or not. It's been made public (I want to say) for over a week, seems it's going well?

@LaurenFBaily when do you think we'd be happy to get this through/remove the toggle fully?

I'm happy to remove as haven't seen any issues in the data/hotjar and not had any issues reported.
