bugfix: bump spl-token-metadata-interface crate version #57

This crate bump would allow any anchor projects built on Solana version 1.18 and onwards (which currently rely on other crates), with the help of WNS being able to be added as a crate.

Can you upgrade to the most recent anchor version either on the Bridgesplit fork or anchor main now that the T22 Extensions PR has been merged? This is a very temporary solution.
