Fix coordinates reference and add tests #29

This PR:

Asserts cr of 4326 for all sf objects in the package (thanks @daviddiviny)
For each exported sf object, adds tests for class and coordinates reference.

Fixes #28, and addresses the issue noted by @ellisp in https://github.com/wfmackey/absmapsdata/issues/24#issuecomment-853585382
