Add SBOM using CycloneDX #198

We should add an SBOM to the client module and the server module so that we can better document what versions of dependencies goes into each release and the artifacts that are built.

I might come back to this in the future. We can use the changes in 4bbea3912bfa31ff519119aee202cc93c3312f97 if we want, but it's not really useful until we have CI/CD upload the bom.json
