Refactor plotting function #184

I needed to plot operons in my project pipeline in a way that I didn't anticipate. This minor refactoring does not assume that all operons being plotted will be in the same directory.

Oh, I just went ahead and approved, but now I see there are checks failing. You probably want to fix those first.
