Clean up project root directory and add a tutorial for Opfi #190

Removes legacy sub-directories that contained outdated/unnecessary scripts and sequence data that shouldn't be in this repo. Also adds a tutorial to introduce users to Opfi usage, which consists of a python notebook and a few input data sets.
