How to store data asuser progresses through Steps?

We need to discuss the best way to store the users data as they progress through each stage of the add home, see below image.

Options We could:

• Write to mongo at each step
• Or write in bulk at the end of the final step.

We may need to look at storing as we go on the client side incase of issues....
