Make Network Manager the default backend for all #2

I've added in the config to make networkmanager the default renderer for netplan. As part of this, I am also backing up the original netplan config which is generated by cloud-init on the original install. I've tested and it appears to work for me!

Thanks for contributing :smiley: cloud-init configuration also needed to be persistently disabled. I've incorporated the intention of your change via https://github.com/wimpysworld/desktopify/commit/9362a25ed19488f4be71faf17bd99208b381d519
