We can add an ignore_errors: yes for the Let's Encrypt stuff. But we still might end up failing with a chicken-and-egg situation because nginx/Apache won't start up if the certs aren't in place.

I think this is all good, based on my experience with https://github.com/wincent/masochist/issues/136 (where we migrated to a new instance running Amazon Linux 2).
