Cleaning `root` and `root/Default` from all user-facing data #6827

The root and root/Default nodes are hidden from the Console users because they aren't of any concern to them. There's still some places where these nodes are shown, and this proposal aims to remove them from the user-facing data.

This proposal specifically aims to:

Stop selecting root automatically in the explorer (up to #2343 to add an empty state, if any)
Remove root/Default/ text from the explorer (Node section)
Remove root/Default/ text from the logs (All resources filter)
