Change the default image to wiremock/wiremock #22

Proposal

Right now the image default to holomekc/wiremock-gui which includes UI for WireMock. This version uses older version, and it is basically a hard fork that does not use WireMock extensions. I would recommend making the official wiremock/wiremock image as a default one, and documenting holomekc/wiremock-gui as alternative
