WireMock 3 extension compatibility

Proposal

We need to ensure that all key WireMock extensions are compatible with WireMock 3. This ticket is used to track compatibility of the extensions and the progress on them

• [ ] WireMock telemetry extension - untested
• [x] JWT Extension -Pending fix: https://github.com/MasonM/wiremock-jwt-extension/pull/14]
