Fix writing log output to log file

The logs are not being written in production.

We have tried different approaches to have error logs in a specific file for all the platforms but haven't achieved it. We can have logs in the development environment but in the production environment. Altough we haven't achieved this in production, we have been able to find the bugs in development so we can implement this in the future.
