For now it's fine as we treat all immature coins as unconfirmed. But we could maybe display them differently?

Obviously, it's low priority.

unconfirmed means they are not count into balance?

You have a smaller balance with a label "unconfirmed" below the main balance, that display the total amount of the unconfirmed coins. Unconfirmed means that the deposit transactions of the coins are not included yet in a block

Is it not a different matter? One about change and one about coinbase immature txs? Or am I misinterpreting what we mean by immature?

i'm not sure what we mean here by immature also, to me it's coins not yet included in a block + coinbases < 100 conf
