Update persons template to match new schema

Current persons template is throwing several validation errors against the new schema. Incomplete list is below:

• General editors in titleStatement need to move to seriesStatement
• respStmt elements in seriesStatement not permitted, likely all can change to tei:editor (or be deleted as redundant)
• biblScope, used in seriesStatement elements for things like sub-modules of SBD, need to be updated to new encoding style

Beyond validation errors, the following changes may be needed:

• //seriesStmt/title[@level="s"], some may instead be level m
• URIs for the modules may need to be udpated

There may be additional changes needed.

Questions here (using Ephrem as my example):

• <funder>The Andrew W. Mellon Foundation</funder> not currently in the transform template, should it be added?

Otherwise, I have updated this. Waiting on confirmation for the above (and to test #61 )
