chore: prepare first nx releases

NEEDS TO GO BEFORE ANY OTHER RELEASE

• merge this branch
• tag each release with a git tag
• push tag to github
• this will trigger publish - the push to docker hub

Next steps:

• delete deploy-3 branch
• update documentation to reflect the change (e.g. checkout information in deploy/README.md)
• announce release
• recreate deploy-1 and deploy-2 branches based off of current main (after this branch is merged)
• create wikibase and deploy releases from those branches: 1.0.1 and 2.0.1
• create github bot user to push to protected main branch and push tags to repo (this may help: https://docs.github.com/en/actions/security-for-github-actions/security-guides/automatic-token-authentication#modifying-the-permissions-for-the-github_token)
