It seems that shopify themes are going the web components direction.
This means we could potentially not need the use of a bundler at all, but just for super minimal things.
PROS:
No concept of build files, they are in right in the assets
Very nice component like APIs
Basically solves #22 🤷
CONS
no minification (but dawn does not use it and it has a 98 performance in their lighthouse)
Could be too many css files on a large build

We could include this as an option on the plop generator. "Would you like this section to have its JS as web component?"
