CryptFS, the solution I was using before, was not ideal because it didn't offer transparent encryption.
VeraCrypt is suggested in the Joplin forums for local encryption.
Apparently it can offer file system-based encryption as well as partition encryption, which would not be a good idea for a number of reasons.
