Rename (or alias) Organization endpoint to Provider #22

To maintain consistency with ETP, rename (or alias) **_Organization_** endpoint to **_Provider_**. An alias would allow API to maintain alignment with HSDS, while still remaining 'ETP-esque' nomenclature
