Demonstration notebook of first iteration of the Space2Stats API

Create a demonstration notebook that shows how to use the first version of the space2stats API. The notebook should demonstrate:

• How to create a geojson object for the aoi parameter
• Query the available fields via the space2stats API
• Query a subset of the fields to generate desired summaries for the aoi via space2stats API
• Visualize the summary with lonboard
