What I Changed

Move notebooks to user-docs folder
Create a new notebook demonstrating the use of the Python package directly

How I Implemented It

I ported the same functionality from the initial space2stats_api_demo.ipynb notebook.

Other Notes

Requires setting environment variables as described in the notebook.

I would love a review from @alukach and someone from the WB team.
