Configure RPCs for Polygon Amoy #1305

Polygon Amoy is the new Sepolia-anchored testnet. Mumbai is anchored to Goerli, which is being deprecated. We need to add a new entry/configurations for Amoy.

[x] Add to Blockchain Watcher

Have we the contract for testnet? I dont see in a wormhole docs

Update: FYI: @walker-16 @ftocal @julianmerlo95 @marianososto The contracts of this chain have not been deployed yet, they will be deployed after Scroll, Mantle, and Blast.
