2.0.0 release changes

Purpose

• Update APIM configs to ingress addresses
• Rename file names of CRDs
• Update operator version as 2.0.0
• Update OperatorHub Resources - fix https://github.com/wso2/k8s-api-operator/issues/587
  • Created new channel 2.0.0-stable for new operator version
  • Tested with deploying to OLM
• Added kustomization to build operator hub resource yaml
