Refactor for JDK17 and Tycho 4.0.7 #118

Purpose

Resolves issues like https://github.com/eclipse-tycho/tycho/discussions/3112 and - generally speaking - eases the issues that arise from technical debt.

Goals

Make the P2Generation and Mojos usable with JDKs that are still supported.

Approach

Update dependencies whenever possible.

Release note

Verified compilation on Maven 3.9.3 and Java version: 17.0.9, vendor: Eclipse Adoptium

Hi @DedunuKarunarathne, I've tried several times but I think CLA Assistant is puzzled by the fact that the repository that I have forked for the pull request is owned by @gspadotto (personal Github account)but the commits in it are from @guidospadotto-profesia (work Github account).

If this can be of any help:
