Copied from CI.yml but removing coveralls

The plan is to add their status to https://github.com/hgrecco/pint/blob/master/downstream_status.md

sorry for the very late reply, @hgrecco. Our test setup is pretty similar to MetPy's, so I'll submit a PR that adds the same checks to the "downstream status" page.

That means we don't verify that pint-xarray is compatible with the release candidates, but depending on your release process (i.e. whether you use a different branch for releases – which as far as I can tell you don't, so far) the only difference would be the version, which doesn't have to be checked that often.
