Switch cert-manager to xchem email? #25

At the moment https certificates are generated using an IM email account. We should investigate how to update the cert-manager (that's deployed in both Kubernetes clusters) with an xchem email address. Actions: -

  1. Obtain xchem email
  2. Investigate email update options
