Removing XOSAN instances from the doc #262

This PR is created to remove XOSAN instances from the documentation and replace them with XOSTOR (when applicable).

I'm not sure replacing XOSAN with XOSTOR is pertinent in every piece of the docs. Pinging @Wescoeur for a check.
