Enable `add_subdirectory()` for xtensor dependency #231

Similar in scope to https://github.com/xtensor-stack/xtensor/pull/1889 and https://github.com/xtensor-stack/xtensor/pull/1865

Should enable users to have xtensor as a vendored dependency via git submodules instead of requiring an installed version of xtensor.
