For example, if a student submits a project, they should be able to go back and review their submission history and view the contents of each submission, its verification code, timestamp, etc., like on Blackboard.

This would be a good idea, and very useful to the students. I'll put it next on my list.

I'm closing this for now, I think the current solution is reasonable without being too complex. More could be done in the future though.
