Add docker-compose, logging support, and custom bot name

• Adds a docker-compose file and updated README
• Updated Dockerfile to create a smaller runtime image without temp files
• Add logging package with debug and trace statements
• Added support to define the name of the bot that triggers a ChatGPT response.
