Support new tracking script and more options #2

It looks like Fathom Analytics updated its tracking script – setting the siteId wasn't working for me. I took the time to update this module to support the new script and also added some more options, as well as support for the new custom domain feature.

I left untouched what didn't need changing, but maybe we could add linting, etc. to further improve this module.
