This is the limitation of the stock firmware. It is super buggy. It allows three connections. However, if you unexpectly close one connection, it will not timeout on its own. That means if you disconnect your connection (e.g., turn off your wifi, or have a spotty connection, etc.) three times, you lose access to the device forever. You have to restart the bulb to solve this problem. I would suggest you to use mininum amount of simutaneous connection. E.g. you could use homeassistant as the main hub and then share it to HomeKit via home assistant. This will make it much more stable.
did your IP address(s) for the bulb(s) change also... this could be part of the problem too...
