feat: video optimization improvements #120

Optimizing video is very slow by default.

We should ensure that the default value for optimization is low quality and look into any improvements to make this run faster on the average user's hardware.

@dacoaster , just noticed that updateVideo() function in CaptureUtility is not working. It's making a corrupted file. What about it on your side?

This may be a recent bug, please fix it if you are able while you are working on the video
