Collateral value format #795

Description

All values look funky. Needed to be formatted. Created a utiil function to solve for this. Also set all assets to be worth $1/token until we have pricing available via subgraph

Currently formatting in the components themselves. Could maybe address this more elegantly by formatting values upstream.
